PROPOSED RESOLUTION
HONORING THE LIFE OF HOLLY DINKEL
WHEREAS, Holly Schwab Dinkel, Vice President of Dinkel's Bakery and beloved wife and mother, passed away on June 27, 2014; and
WHEREAS, Holly was born on December 15, 1946 in New London, Connecticut; and
WHEREAS, because her birthday was so close to Christmas, her parents bestowed her with the name "Holly; and
WHEREAS, Holly lived in 23 different homes before high school as she traveled with her father who was in the Navy. After high school, she lived in Paris and Germany; and
WHEREAS, after studying in Munich through the University of Maryland, Holly switched to Loyola University's Rome Center; and
WHEREAS, after following a Chicago area boyfriend to Illinois from Rome, Holly landed a teaching job at Staff High School in Palos Hills; and
WHEREAS, on February 13, 1972, she tapped Norm Dinkel on the shoulder at Butch McGuire's and said "You look like someone I know;" and
WHEREAS, Norm saw that Holly was absolutely gorgeous, a German-Swedish vision and married her on June 30, 1973; and
WHEREAS, after becoming pregnant, Holly quit her job at Stagg and stayed home for nearly 20 years to raise her children; and
WHEREAS, Holly then obtained a Master's degree at Northeastern University and became a special education counselor at Chicago's Gray Elementary School and Von Steuben High School; and
WHEREAS, as Vice-President of Dinkel's Bakery, Holly was a recipe taster, quality control officer and marketing specialist; and
WHEREAS, her responsibilities include decorating the Dinkel's booth at Chicago's Christkindlmarket, designing Dinkel's first café and menu and supervising photo shoots for the bakery catalog; and
WHEREAS, her reach was nationwide, as each Christmas she personally packaged thousands of Dinkel's Bakery's world famous stolen, a buttery Yule log that some view as the "anti-fruitcake," to be shipped across the country; and
WHEREAS, Holly loved to travel and visited Argentina, China, South Africa and Peru. She spoke French, Italian and a little German; and
WHEREAS, Holly played golf in the summer and was a director of the Women's Western Golf Association, where she helped administer scholarships for young women. In winter, she bowled and played paddle tennis; and
WHEREAS, Holly is survived by her husband Norman Dinkel; children Jennifer (Christopher) Hartzell, Sandgren (Luke) Karl and Eric Norman Dinkel; grandchildren Alison, Caitlyn and Jason Hartzell, and Adelina and Greata Karl; brother Donald Schwab and sister Trudi Jung; sister in law of Joan (Donald) Tierney; and many nieces and nephews; and
NOW, THEREFORE BE IT RESOLVED, that the Board of Commissioners of Cook County, on behalf of the 5.2 million residents of Cook County who she touched, takes great pleasure in commemorating the life of Holly Dinkel and herewith expresses its sincere gratitude for the invaluable contributions he has made to the Citizens of Cook County, Illinois; and
BE IT FURTHER RESOLVED, that a suitable copy of this Resolution be spread upon the official proceedings of this Honorable Body and that an official copy of the same be tendered to the family of Holly Dinkel.
